Chalk Restaurant, Wiston Estate

As part of the Wiston Estate winery development, ECE were trusted with the restorations of two agricultural barns to house the new on-site restaurant, Chalk.

Chalk restaurant is located in the restored 18th century flint threshing barn to maintain a strong visual reference to the site’s agricultural history.

The existing timber roof trusses, rafters and purlins have been exposed throughout the barn with timbers sensitively replaced where structurally necessary.

The restaurant has up to 60 covers plus an extra 10 in the private dining room, which features an exposed flint wall and private terrace.

Originally occupied by a storage building, the courtyard has become the heart of the site with its water features and outdoor dining space, breathing life into the surrounding restored barns.

The Wiston Estate winery development has been designed to combine the new and the old to create a truly interconnected site fitting for the South Downs National Park location.
